Title:Operation Food Safety: Pre-Kindergarten to Grade 4

Description:Developed in response to legislation requiring food safety education in Arkansas public schools. This curriculum is divided into three grade clusters: Pre-K and Kindergarten, Grades 1 and 2, and Grades 3 and 4. Each grade clusters consist of three units: 1) Hand washing - stresses the importance of personal hygiene in the prevention of foodborne illness, 2) Keeping Things Clean - focuses on the importance of cleanliness in the kitchen and the dangers of cross contamination, and 3) Keeping Food Hot or Cold - teaches students time and temperature guidelines critical to food safety.
